Think Chopsley. LIke Morgus the Magnificent’s sidekick, you need to CHOP AND TASTE. And like the experiments Morgus conducted this is not an exact science but rather a creative adventure. Don’t use too much fish sauce or too much sugar but taste and re-taste until you have a perfectly balanced creation. This slaw elevates a good beef hot dog. But it is equally wonder on a grilled salmon filet.

In a large bowl, add the grated ginger, minced garlic, lime juice, fish sauce, soy sauce, brown sugar, slice red onion, minced jalapeno pepper, sliced bell peppers, fresh cilantro, scallions and salt and pepper. Chopped Peanuts optional.
Season to taste. Taste as you go along to get the right balance of sweet and sour, with as much or as little heat as you like. Refrigerate for an hour to allow the flavors to marry.
